This red apple slaw is a perfect side or sweet dessert for your meal. The portion is big and the ingredients are easy. You can dice the apples up small and use pre-shredded cabbage to make it super easy to put together. And if you like a little more spice, add more pepper. You just have to make it ahead a little so that it can soak up the goodness and be crunchy and sweet. You will love sharing this with others and they will never even guess that it's a special recipe with low sodium ingredients, they will just think it's darn good food.

Ingredients

1 head CABBAGE, RAW, 7'' diameter

1.5 cup CARROT, RAW, GRATED
3 medium APPLES, RED DELICIOUS, W/SKIN, RAW

1 cup MAYONNAISE, REDUCED FAT, W/OLIVE OIL

¼ cup SUGAR, GRANULATED

3 tbsp VINEGAR, DISTILLED

½ tsp PEPPER, BLACK, GROUND

Instructions

Shred cabbage and carrots. Chop apples into small pieces.
Place the cabbage into a large salad bowl. Add the carrots and toss to combine. Place the chopped apples in the bowl and toss again.
In a separate bowl, whisk together the mayonnaise, sugar and vinegar. Add the pepper and mix together thoroughly. Pour the mixture/dressing into the cabbage mixture and mix well. Cover and refrigerate for 1 hour to chill throughout before serving. Serving size is about ¾ cup.
