Ingredients

6 medium APPLES, GALA, W/SKIN, RAW
2 tsp CINNAMON, GROUND
3 cup ALL PURPOSE FLOUR, BLEACHED, enriched, pre-sifted
1 cup OLIVE OIL, salad or cooking
4 large EGG, CHICKEN, RAW, whole, fresh
2 ⅓ cup SUGAR, GRANULATED
¼ cup ORANGE JUICE, chilled, from concentrate
1 tbsp BAKING POWDER, DOUBLE ACTING, salt aluminum sulfate
1 tbsp VANILLA EXTRACT, IMITATION

Instructions

Preheat oven to 350'F. Spray pan with non stick cooking spray. Peel, core and cut apples into slices or chunks. Combine cinnamon and ⅓ cup sugar. Mix in with apples, coating completely. Set aside.

Combine remaining ingredients in a bowl and beat with an electric mixer until smooth. Layer half the cake batter, then add the apples on top. Pour remaining cake batter on top of apples and use a spatula if necessary to ensure all apples are covered.
Bake for 75 minutes, or until golden brown and toothpick inserted into the center comes
out clean.
