Ingredients
โ cup BROCCOLI FLOWER CLUSTERS, RAW, flowerets
1 tbsp OLIVE OIL, salad or cooking
โ tsp PEPPER, BLACK, GROUND
โ cup WHITE RICE, SHORT GRAIN, RAW
1 tbsp Toasted Onion
โ tbsp GARLIC, RAW
1 tbsp CREAM, HEAVY, whipping cream (1 cup fluid = 2 cups whipped)
2 tbsp PARMESAN CHEESE, GRATED
1 cup Vegetable Stock / Broth
Instructions
1. Preheat oven to 400'F and line a baking sheet with parchment paper. Set aside.
2. Toss broccoli with 1 teaspoon olive oil in a bowl and season with black pepper. Transfer to prepared baking sheet and spread broccoli into a single layer without overcrowding. Place in preheated oven and roast for 12-15 minutes or until tender and starting to brown. Remove from oven and set aside.
3. While broccoli is roasting, heat remaining olive oil in a skillet over medium high heat.
4. Add toasted onion, garlic and rice to skillet and cook for 1 minute or until rice is coated and golden brown. Reduce heat to medium and add ยฝ cup vegetable broth to skillet and stir continuously. Once the excess liquid has been absorbed, repeat this process with the remaining vegetable broth until the rice is tender and creamy and the excess liquid has been absorbed.
5. Remove from heat and stir in roasted broccoli, heavy cream, and parmesan cheese. Serve immediately.
