Renal Diet Podcast 062 – Low Sodium Picnic and Potluck Recipes

Watching your diet is the most important thing. However, there are low Sodium picnic and potluck recipes that you can enjoy without worrying too much.

I wanted to talk to you today about some picnic and potluck recipes because it's so great way to go on a picnic it's still a great time of year to do that and it also is still a great time you might end up doing a family get-together and do like a potluck. So one of the most important things that you need to do is watch your diet. I've already said that a million times you probably know that but watching your diet is important all the time.

Something I want to talk to you about was maybe some recipes that you could take that are pretty good for a pot luck for you to do because that will allow you to stay on your diet and be able to get what you need to get from that and have a good time still.

The first one I want to talk about is like a pasta salad. Pasta is great because it's good for it not being potatoes and you can substitute some rice there if you feel like. You put a little bit of pasta noodles, Rotini noodles and the recipes I'll put a link to the blog post.

You put some apple cider vinegar olive oil garlic, black pepper oregano, some onions, carrots, broccoli, celery, bell peppers and a little bit of cheese. Mix that all together let it marinate a couple hours or overnight and that way all the flavor gets into the veggies and you have a great little pasta salad and nobody's gonna realize is not salty. And if you want to add a little zest you can add some cayenne pepper to that but another thing that you could do if you have a like a barbecue do some kebab and those are an easy way to put like just a little bit of meat and a lot of vegetables like you can put onions, bell peppers, pineapple which is a fruit on there, tomatoes if you're still able to eat a few tomatoes and then like it's a couple pieces of meat and then your keeping meat amount down but your still getting a yummy meal.

You can do some kebabs, you can do a little bit different foods like that chicken or shrimp a little bit of beef is best.
And then there's another idea some Chicken Salad Zucchini boats so what that involves is you take cooked chicken and you shred it up and you know you can use a little less chicken if you're watching really close on the protein.
And add a couple zucchinis and then some apple, celery, grapes, onions and a little bit of mayo and a little lemon and mix that all together you put some pepper in there with it and you make little boats out of the zucchini. And cut out the middle and then see what's the key first but you do that and you just. Put those kind of input the mixture into the zucchini and you kinda like a little boat.

Those are some ideas you can do other things that you know are healthy for you but I just strongly encourage you if you're going to an event or a potluck and you are asked to bring food, go ahead and bring something that you know you can eat and don't label is diet, don't label it as special food because we all can be little better little healthier so just watch what you're doing with those things and enjoy the event and not feel like "Hey, I have to watch everything I eat" because you brought something that is healthy for you to eat. If you have problem with it you might go ahead and eat a little bit beforehand so you're not as tempted to eat so much at the event.
