Preheat oven to 350'F. Spray pan with non stick cooking spray.
Peel, core and cut apples into slices or chunks. Combine cinnamon and ⅓ cup sugar. Mix in with apples, coating completely. Set aside.
Combine remaining ingredients in a bowl and beat with an electric mixer until smooth.
Layer half the cake batter, then add the apples on top.
Pour remaining cake batter on top of apples and use a spatula if necessary to ensure all apples are covered.
Bake for 75 minutes, or until golden brown and toothpick inserted into the center comes out clean.
