1. Preheat the oven to 425' Fahrenheit.

2. Prepare the berries by rinsing them and drying them. Slice the strawberries into ¼'ths.

3. Mix the berries, cornstarch, honey and lemon zest in a bowl.

4. Lay out the pie crust on a countertop on top of a piece of parchment paper.

5. Spread the fruit on top of the crust, leaving a 2 in border all around.

6. Fold the dough over the fruit, making sure to cover at least ½ in of the fruit with the edges of the pie crust.

7. Whisk the egg and brush it lightly on the top edge of the galette crust.

8. Transfer the galette (still on the parchment paper) onto a baking sheet pan.

9. Put the galette in and bake for 25-30 minutes until golden brown and fruit mixture is bubbling.
