Ingredients

Mint Syrup

  • 1/2 cup mint leaves
  • 1/2 cup water
  • 1/2 cup sugar

Lemonade

  • 6 Tbsp lemon juice
  • 6 cups chopped watermelon (without seeds)
  • 2 cups ice

Instructions

1. First, make the mint syrup by combining the water, sugar and mint leaves in a medium saucepan. Bring to a boil over high heat, then lower the heat and let the mixture simmer for 2 minutes.

2. Strain the syrup through a fine mesh sieve and let it cool to room temperature.

3. Then make the lemonade. Add the lemon juice into a 2 cup measure. Next add the mint syrup. Top it off with enough water to reach the 2 cup mark. Then pour the lemonade into a pitcher.

4. Put the chopped watermelon into a blender and blend until smooth. Strain the watermelon through the fine mesh sieve into the lemonade pitcher. Add ice and stir to combine.
