1/2pound shrimp, peeled, deveined, and tails removed
3/4cup oatmeal
1/2cup panko breadcrumbs
1 egg
1 tsp garlic minced
2 tbsp diced onion
1/4 tsp black pepper
1/4 tsp red pepper flakes
1 tsp dried parsley
1 tbsp olive oil
Garlic and Lemon Aioli
1/4cup mayonnaise
2 tsp lemon juice
1 tsp minced garlic
1 tsp dried parsley
1 tsp dried parsley
Instructions
Add the oatmeal, bread crumbs, egg, garlic, onion, black pepper, red pepper, and parsley to a bowl. Mix together until well blended.
Dice/chop the shrimp into small pieces. Add to the oatmeal mixture and stir together until well mixed.
Refrigerate for 20-30 minutes to firm up the mixture. Using your slightly damp hands, divide the shrimp mixture into 4 equal portions and gently shape each portion into a patty and place on a plate.
Heat olive oil in a non stick skillet over medium heat until shimmering. Add patties to skillet and cook until patties are golden brown and register 140' F. About 4-5 minutes per side.
While burgers are cooking, mix together the mayo, lemon juice, garlic and parsley for the Aioli.
Once cooked, transfer patties to a paper lined plate and let the oil drain.
Spread aioli evenly on the burgers, like a sauce. Wrap in a romaine lettuce leaf. Serve and enjoy.
