Ingredients

Shrimp Burgers

  • 1/2 pound shrimp, peeled, deveined, and tails removed
  • 3/4 cup oatmeal
  • 1/2 cup panko breadcrumbs
  • 1 egg
  • 1 tsp garlic minced
  • 2 tbsp diced onion
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 1 tsp dried parsley
  • 1 tbsp olive oil

Garlic and Lemon Aioli

  • 1/4 cup mayonnaise
  • 2 tsp lemon juice
  • 1 tsp minced garlic
  • 1 tsp dried parsley
  • 1 tsp dried parsley

Instructions

  1. Add the oatmeal, bread crumbs, egg, garlic, onion, black pepper, red pepper, and parsley to a bowl. Mix together until well blended.
  2. Dice/chop the shrimp into small pieces. Add to the oatmeal mixture and stir together until well mixed.
  3. Refrigerate for 20-30 minutes to firm up the mixture. Using your slightly damp hands, divide the shrimp mixture into 4 equal portions and gently shape each portion into a patty and place on a plate.
  4. Heat olive oil in a non stick skillet over medium heat until shimmering. Add patties to skillet and cook until patties are golden brown and register 140' F. About 4-5 minutes per side.
  5. While burgers are cooking, mix together the mayo, lemon juice, garlic and parsley for the Aioli.
  6. Once cooked, transfer patties to a paper lined plate and let the oil drain.
  7. Spread aioli evenly on the burgers, like a sauce. Wrap in a romaine lettuce leaf. Serve and enjoy.
