Pumpkin Spice Meringue Cookies (Low-Sugar!)

Ingredients

Scale

3 large egg whites

1/2 teaspoon cream of tartar

1/3 cup Splenda or other sugar substitute

2 teaspoons vanilla extract

Pinch of pumpkin pie spice

Instructions

1. Preheat oven to 350 degrees Fahrenheit (or 180 degrees Celsius)

2. Combine all dry ingredients in a bowl

3. Beat eggs until frothy

4. Add Splenda and continue beating until stiff peaks form

5. Fold in pumpkin spice and vanilla

6. Drop by tablespoonfuls onto parchment paper lined baking sheet

7. Bake at 350 degrees F (180 degrees C) for about 15 minutes

8. Remove from oven and allow to cool completely before serving
