Ingredients

Dressing

  • 2 TBSP Olive Oil
  • 2 TBSP Apple Cider Vinegar
  • 2 TBSP honey
  • 1 tsp dijon mustard
  • 1 tsp minced garlic
  • 1/2 tsp black pepper

Salad

  • 2 cups romaine lettuce
  • 2 ripe nectarines, pitted and sliced
  • 1 cup or 1/2 medium cucumber, peeled and sliced into coin shapes
  • 1/4 cup diced red onions
  • 2 tbsp blue cheese crumbles

Instructions

  1. Add the romaine, nectarines, onions, cucumber, blue cheese and chopped walnuts to a bowl. Toss together.
  2. In a separate jar, combine the olive oil, apple cider vinegar, honey, dijon mustard, garlic and pepper. Shake together in a jar or whisk together.
  3. Pour over salad and toss together.
