Ingredients

  • 1 cup unsalted butter (room temperature)
  • 1/2 cup sugar
  • 1 egg
  • 1 1/2 cup all purpose flour
  • 1/2 cup almond flour
  • 2 tsp almond extract

Instructions

  1. Preheat the oven to 400'F. Mix the all purpose flour and the almond flour together in a small bowl.
  2. Using a large bowl, whip together the butter, sugar, egg, and almond extract until light and fluffy.
  3. Gradually add the flour, 1/2 cup at a time, beating well each time you add the flour mixture.
  4. Line a cookie sheet with parchment paper, and drop by teaspoonful 2 inches apart on a cookie sheet.
  5. Using the bottom of a glass cup, press down each cookie until it is about 1/2 in high.
  6. Bake for 8-10 minutes in the preheated oven, or until cookies are very lightly browned.
