Watermelon Gazpacho is a refreshing and vibrant chilled soup, perfect for summer. Combining sweet watermelon with savory vegetables and aromatic herbs, this easy-to-make dish offers a nutritious and delicious way to cool off on hot days.

Ingredients

  • 4 cups cubed fresh watermelon, remove as many seeds as possible
  • 1 cup cucumber, sliced
  • 1 cup tomato, sliced and seeds removed
  • 1 1/2 cup sliced red bell pepper
  • 1/4 cup chopped green onions, white portion only
  • 1 tbsp garlic
  • 1 tsp ginger spice
  • 1/4 cup fresh basil leaves
  • 4 tbsp red wine vinegar
  • 1/2 tsp black pepper
  • 1/4 cup crumbled feta

Instructions

  1. Add the tomato, cucumber, red bell pepper, onions, and half of the watermelon to a blender. Puree until smooth.
  2. Add garlic, ginger, basil, vinegar, pepper and rest of watermelon. Puree until smooth.
  3. Pour into bowls and sprinkle with feta cheese.
