This chili will keep you warm and works for pre-dialysis and ESRD patients both! I found it at davita.com

Ingredients

  • 1.5 pounds lean ground beef
  • 16 ounce can low sodium stewed tomatoes, blenderized
  • 1 tablespoon oil
  • 1-2 tablespoons chili powder (to taste)
  • 1/2 cup onions, chopped
  • 1 stalk celery, chopped
  • 1/2 cup green bell pepper, chopped
  • 1.5 cups water

Instructions

  1. Heat large skillet on medium heat. Add oil, onion, celery, and pepper until tender but not brown.
  2. Add ground beef, breaking into small pieces and cook until brown.
  3. Add blenderized tomatoes, chili powder, and water. Mix thoroughly; reduce heat to low.
  4. Simmer for several hours.
  5. Serving Size = 1 cup
