Mediterranean Inspired Quinoa Salad
This quick and easy side dish pairs the bold Mediterranean flavors of lime, Feta cheese, carrots and cucumbers with the subtle backdrop of quinoa. Thanks to the naturally flavored feta cheese, this dish doesn't need any added salt to help balance the flavors

Ingredients
¼ cup QUINOA GRAIN
1 oz lime juice, fresh or frozen
½ oz FETA CHEESE, CRUMBLED
2 Tbsp CARROT, RAW, CHOPPED, Diced
¼ cup CUCUMBER, PEELED, RAW, diced
1 Tbsp ONION, RAW, CHOPPED
1 tsp PARSLEY, DRIED
½ cup WATER, MUNICIPAL
½ tsp Texas Twist
Instructions
1. Cook quinoa according to package directions with the ½ cup water and ¼ cup quinoa. Remove from heat and let cool briefly.
2. Fluff quinoa with a fork and stir in lime juice, Feta cheese, carrot, cucumber, onion, Texas twist, and parsley until thoroughly combined. Season with black pepper to taste.
3. Refrigerate for at least 30 minutes before serving
Notes
For best results, you will want to make this dish in advance to give the flavors a chance to blend.
